  3. Parmesan Cheese - 50 grams
  4. Black Pepper - 1 tsp
  5. Chicken Stock - 200 ml
  6. Dijon Mustard - 1 tsp
  7. Olive Oil - 1 tbsp
  8. Plain Flour - 2 tbsp
  9. Salt - 1 tsp
  10. Sun Dried Tomatoes - 75 grams
  11. Brown Onion - 1
  12. Fresh Basil - 10 grams
  13. Garlic Clove - 2
  14. Lemon - 1/2
  15. Chicken Breasts - 2

Method

  1. Prep and coat the chicken: Dust the chicken pieces in seasoned flour until evenly coated on all sides. The flour coating is what gives you that beautiful golden colour and helps the sauce cling to every piece.
  2. Fry the chicken: Heat the butter and olive oil in a large frying pan over a medium-high heat. Add the chicken and fry for 8 minutes on each side until golden and coloured all over. You are not fully cooking the chicken at this stage - just building colour. Remove from the pan and set aside.
  3. Build the sauce base: In the same pan with all those lovely cooking juices, add 1 onion, finely diced and cook over a medium heat for 5 minutes until softened. Add 2 garlic cloves, minced and cook for another minute. Then add the roughly chopped sun-dried tomatoes and stir through.
  4. Add the liquids: Pour in 200ml chicken stock and stir, scraping up any golden bits from the bottom of the pan Add 150ml double cream and stir to combine. Bring to a gentle simmer.
  5. Finish the sauce: Add in the grated parmesan and 1tsp mustard then stir until the cheese has melted into the sauce. Return the chicken to the pan and simmer gently for 10 minutes until the chicken is cooked through and the sauce has thickened slightly.
  6. Final touches: Squeeze in the juice of 1/2 lemon - this lifts the whole sauce and stops it feeling too heavy. Taste and adjust seasoning if needed then scatter with fresh basil and serve immediately over fluffy rice.
