
Moussaka
There are some dishes that don't just taste good - they transport you somewhere. Moussaka is one of those dishes for me.
One mouthful and I'm instantly back in the Greek Islands, lazy summer evenings, warm air, and a traditional taverna. The kind of holiday meal you eat slowly, with good company and a cold glass of something refreshing alongside. It's the dish I always order without thinking and always finish completely.
Making it at home felt like a project the first time, but it's actually far more straightforward than it looks. Layers of golden fried aubergine, potato and richly spiced beef sauce, topped with a silky béchamel and bubbling mozzarella. Somehow indulgent yet lighter than a lasagne - which is no bad thing.
We use beef mince as a personal preference but lamb is the more traditional choice and works just as beautifully. Either way, the cinnamon and oregano in the sauce are what give it that unmistakeable Greek warmth. Serve with a simple Greek salad and our easy garlic flatbreads for a proper Greek feast at home.

Ingredients
- Egg - 1
- Mozzarella - 125 grams
- Parmesan Cheese - 40 grams
- Salted Butter - 40 grams
- Whole Milk - 400 ml
- Beef Stock Cube - 1
- Black Pepper - 1 tsp
- Cinnamon - 2 tsp
- Dried Oregano - 2 tsp
- Ground Nutmeg - 1/2 tsp
- Olive Oil - 4 tbsp
- Plain Flour - 40 grams
- Salt - 2 tsp
- Tinned Chopped Tomatoes - 400 grams
- Tomato Puree - 2 tbsp
- Aubergine - 2
- Brown Onion - 1
- Garlic Clove - 2
- Maris Piper Potatoes - 500 grams
- Beef Mince - 500 grams
Method
- Fry the aubergines: Slice the aubergines into 5mm rounds, salt generously on both sides. Heat 2 tablespoons olive oil in a frying pan over medium-high heat and fry the aubergine slices in batches until golden on both sides. Set aside.
- Par-boil the potatoes: Bring a pan of salted water to the boil. Peel and slice the Maris Piper potatoes into 5mm rounds and par-boil for 8 minutes until just starting to soften. Drain well and set aside.
- Cook the meat: In a large pan, fry the finely chopped onion in a little olive oil over medium heat until softened. Add 2 crushed garlic cloves and cook for another minute. Add the beef mince (or lamb for a more traditional version) and cook until browned, breaking it up as you go.
- Build the sauce: Stir in the tinned chopped tomatoes, 2 tbsp tomato puree, 2 tsp dried oregano, 2 tsp ground cinnamon, 1 tsp salt and black pepper and crumble in a beef stock cube. Stir well and simmer over a low heat for 20 minutes until the sauce has thickened and the flavours have developed.
- Melt 40g butter in a saucepan over medium heat. Add 40g plain flour and stir continuously for 1-2 minutes to form a roux. Gradually add 450m whole milk, stirring constantly until you have a smooth, thick sauce. Remove from heat, stir in 40g grated parmesan, 1/2 tsp nutmeg and a beaten egg. Season well with salt and pepper.
- Preheat oven to 180°C. In a large baking dish, layer the par-boiled potatoes across the base. Add a layer of fried aubergine, then the meat sauce. Repeat the aubergine layer, then pour the béchamel evenly over the top. Scatter over the torn mozzarella.
- Bake and rest: Bake for 45 minutes until the top is deeply golden and bubbling. Leave to rest for 10 minutes before slicing - this helps it hold together when serving.
Hints and Tips
- Salt the aubergine first
Salting the aubergine slices draws out excess moisture and stops them becoming soggy in the dish. Pat them really dry before frying.
- Fry the aubergine properly
You want the aubergine golden on both sides before it goes into the dish. Don't rush this step - properly fried aubergine has a completely different texture to underdone aubergine and makes a significant difference to the finished dish.
- The cinnamon is the secret
It might seem like an unusual addition to a meat sauce but cinnamon is what gives moussaka its distinctive warmth and depth. Don't be tempted to leave it out or reduce it - it's what makes the dish taste authentically Greek.
- Let it rest before slicing
This is really important. Leave the moussaka to rest for at least 10 minutes after it comes out of the oven. It holds together much better when sliced and the flavours settle beautifully.
- Make it ahead
Moussaka is the perfect make-ahead dinner. Assemble the whole dish, cover and refrigerate, then bake when you're ready. Add an extra 10 minutes to the baking time if cooking straight from the fridge.
